2.2 lbs Dried Turkish figs

1.5 lbs Sugar

2 1/2 pints of Water

1 Star Anise

1 Cinnamon


Dice figs 1-2cm, this does not have to be perfect, just a rough chop. Place everything in a pot and bring to a boil. Once boiling, reduce heat to a simmer and cook for 30-45 minutes, stirring occasionally to prevent sticking, until liquid has thickened and syrupy.

Remove from heat, allow to cool and place in air tight jars or containers. Store in refrigerator for up to one month.
